Servings: 12 muffins

Ingredients:

Quantity Ingredient
3 cups All-purpose flour
2 tsp Baking powder
1 tsp Salt
1/2 cup Buttermilk baking mix
2 1/2 cups Sugar
1/2 cup Raisins
1/2 cup Hot water
2/3 cup Applesauce
5 tbsp Molasses
1 cup Brown sugar
2/3 cup Milk
2 Eggs
1/4 cup Chocolate chips

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. Toast bran in a skillet over medium heat for about 5 minutes, until fragrant and slightly golden. Transfer the toasted bran to a large mixing bowl and add the remaining dry ingredients (excluding chocolate chips).

  3. Soak raisins in hot water for 5 minutes, then puree them in a heat-resistant blender until smooth.

  4. In a separate mixing bowl, combine the raisin puree with the remaining wet ingredients: applesauce, molasses, brown sugar, milk, and eggs. Mix well.

  5. Combine the wet mixture with the dry ingredients, stirring until just combined. It’s okay if some flour is still visible; overmixing can result in tough muffins.

  6. Gently fold in the chocolate chips until evenly distributed throughout the batter.

  7. Spoon the batter into the prepared muffin tins, filling each liner almost to the top.

  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  9. Serve warm and enjoy the delightful aroma and taste of these sweet bran muffins!

These muffins are best enjoyed fresh out of the oven, but they can also be stored in an airtight container at room temperature for up to 3 days. Simply reheat them briefly in the microwave or oven before serving for that freshly baked taste. Whether for breakfast, brunch, or a quick snack on the go, these sweet bran muffins are sure to become a family favorite!
