Ingredients:

  • 10 pounds of meat (preferably flank steak or skirt steak)
  • 1 yellow onion
  • 1 purple onion
  • 1 green bell pepper
  • 1 bunch of cilantro
  • 2-3 cloves of garlic
  • 1 quart of orange juice
  • Salt and pepper to taste

Instructions:

  1. In a large plastic or other non-reactive bowl, place a layer of meat.
  2. In a small bowl, mix together the yellow onion, purple onion, green bell pepper, cilantro, and garlic.
  3. Spread a handful of the onion mixture over the layer of meat, then pour enough orange juice to cover the meat. Season with salt and pepper.
  4. Repeat the layers until all the meat is used, pouring any remaining orange juice over the mixture.
  5. Marinate the meat for at least 4 hours, or preferably overnight. Halfway through marinating, turn the meat over to ensure even distribution of flavors.
  6. Grill the marinated meat over charcoal. Cooking time will depend on the thickness of the meat and the heat of the grill, but it’s usually not more than 5 minutes per side for medium doneness.
  7. Once cooked to your liking, remove the carne asada from the grill and serve it with salsa on the side.

Additional Tips:

  • For added flavor, you can add sliced jalapeños or chipotle peppers to the marinade.
  • Serve the carne asada with warm tortillas, guacamole, and lime wedges for a complete Mexican feast.
  • Leftover carne asada can be used in tacos, burritos, salads, or sandwiches for quick and delicious meals throughout the week.
  • Make sure to slice the meat thinly against the grain for the most tender results.

With its vibrant flavors and tender texture, Big J’s Carne Asada is sure to be a hit at your next gathering. Enjoy the sweet and savory goodness of this crowd-pleasing dish!
