    • Heat a paniyaram pan on medium heat. Add a little oil in each cavity of the pan.

    • Alternatively, you can deep fry the pakoras in a kadai (wok) if you prefer them crispier. After frying, drain the excess oil and set them aside.
  2. Prepare the Raita:

    • In a separate mixing bowl, combine the curd (yogurt), cumin powder (jeera), black pepper powder, chaat masala, and salt. Whisk the ingredients together with 1/4 cup of water to achieve a smooth, creamy consistency.
  3. Assemble the Raita:

    • Once the pakoras are softened and drained, add them to the prepared raita mixture along with the cut dates.
    • Gently stir to combine, ensuring the pakoras and dates are coated with the yogurt dressing.
    • Garnish with a sprinkle of red chili powder for an extra touch of flavor and color.
