Sweet Pomegranate Jam with Apple and Lemon

Pomegranate Jam (Confettura di Melagrana)

Ingredients:

Pomegranate 5 kg
Golden Apples 220 g
Sugar 300 g
Lemon Zest 1
Lemon Juice 60 g

Instructions:

  1. Begin by cutting the pomegranates in half. Gently remove the seeds, collecting approximately 870g of arils into a large bowl.

  2. Wash the apples thoroughly. Without peeling, slice them in half, remove the core, and cut them into small pieces.

  3. In a large saucepan, combine the pomegranate seeds, apple pieces, and the zest of the lemon. Add the sugar, and cover the saucepan with plastic wrap. Let the mixture rest for a few moments to allow the flavors to meld.

  4. As the mixture heats, foam will begin to form on the surface. Remove the foam carefully using a skimmer.

  5. At this point, you can use an immersion blender to break down the fruit further and extract all of the juice, making the mixture smooth.

  6. Bring the jam mixture back to a boil, allowing it to thicken. To test the consistency, place a spoonful of the jam on a cold plate. If it runs off, it needs more cooking time. If it stays firm, it’s ready.

  7. Once the jam has reached the desired consistency, carefully transfer it into sterilized jars using a ladle. Be sure to leave about 1 cm of space at the top.

  8. Seal the jars tightly. You may either invert the jars to create a vacuum seal or skip this step. The heat from the jam will naturally create the seal, ensuring that the jam can be stored for long periods.

  9. Allow the jars to cool completely before storing.
