Instructions:

Step 1: Crumble the Parathas
Begin by breaking the tawa parathas (either leftover or fresh) into small pieces. You can do this by simply tearing the parathas with your hands into bite-sized chunks. For a finer texture, place the torn pieces into a mortar and pestle, and pound them into a coarse, crumbly mixture. Alternatively, if you prefer, you can use a food processor or chopper to achieve the same result.

Step 2: Roast the Nuts
Next, heat a kadhai (or a large frying pan) on medium heat and add the ghee. Once the ghee has melted, add the mixed nutsโ€”cashews, almonds, or any nuts of your choice. Step 3: Combine the Roti Crumbs and Nuts
Add the crumbled paratha mixture into the kadhai with the roasted nuts and ghee. Stir the mixture for 2-3 minutes, allowing the roti crumbs to absorb the ghee and nutty flavors, while also becoming a little crispy and golden in color.

Step 4: Sweeten the Mixture
Once the crumbs and nuts are well combined and roasted, turn off the flame. Add the sugar or grated jaggery into the mixture. Stir it well for another couple of minutes to allow the sweetener to melt and coat the crumbled roti evenly. The sugar or jaggery will add a delightful sweetness to the dish, balancing out the richness of the ghee and nuts.

Step 5: Serve and Enjoy
Once everything is mixed together and the sweetener is well incorporated, transfer the Punjabi Choori to a bowl. Serve it warm, ideally with a refreshing glass of milk on the side.
