Semur Daging (Beef Stew with Sweet Soy Sauce)
Ingredients:
- 300 grams beef (preferably from the chuck or brisket)
- 3 eggs (optional)
- Sweet soy sauce (kecap manis), to taste
- Water, as needed
- Seasoning (optional), to taste
- 4 shallots, sliced thinly
- Fried shallots, for garnish
Spice Paste:

- 6 cloves garlic
- 2 candlenuts (kemiri)
- ½ teaspoon ground nutmeg
- 1 tablespoon fried shallots
- Brown sugar, to taste
- Salt, to taste
- Black pepper, to taste

Prepare the Beef:
- Slice the beef into pieces according to your preference.

Make the Spice Paste:
- Blend the garlic, candlenuts, ground nutmeg, and fried shallots into a smooth paste. If needed, add a small amount of water to help with blending.

Marinate the Beef:
- In a mixing bowl, combine the spice paste with sweet soy sauce. Adjust the amount of soy sauce to taste.
- Add the beef to the bowl, ensuring each piece is well-coated with the spice mixture. Let it marinate for about 15 minutes.

Prepare the Eggs (Optional):
- If using eggs, make shallow cuts on the surface of the eggs, then fry them until the surface is slightly rough. Drain and set aside.

Cook the Shallots:
- Heat some oil in a pan and sauté the sliced shallots until they are fragrant.

Add the Beef:
- Add the marinated beef to the pan with the sautéed shallots. Stir until the beef starts to change color.

Add Eggs and Seasoning:
- If using, gently add the fried eggs to the pan. Stir to combine.
- Pour in enough water to cover the beef, then add more sweet soy sauce and seasoning to taste. Stir well.

Simmer the Dish:
- Allow the mixture to simmer until the water reduces and the beef becomes tender. Keep an eye on it and adjust the seasoning as needed.

- Once the beef is tender and the sauce has thickened to your liking, transfer to a serving dish. Garnish with fried shallots.
