Ingredients:

  • 500 grams chicken, cut into bite-sized pieces
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 ripe tomato, chopped
  • 1 large red chili, sliced
  • 5 small bird’s eye chilies, sliced
  • 1 piece ginger, crushed
  • 2 bay leaves
  • 5 tablespoons oyster sauce
  • Sweet soy sauce, to taste
  • Sugar, to taste
  • Salt, to taste
  • Water, as needed

Instructions:

  1. Prepare the Chicken:

    • Wash the chicken pieces thoroughly under cold water. Cut into bite-sized pieces, ensuring they are uniform in size for even cooking.
  2. Cook the Chicken:

    • In a large pot, add the chicken pieces and cover with water. Bring to a boil and then reduce to a simmer. Cook for about 25 minutes, or until the chicken is tender and fully cooked. Remove the chicken from the pot and set aside.
  3. Prepare the Vegetables and Aromatics:

    • Thinly slice the onion, garlic, red chili, and bird’s eye chilies. Chop the tomato into small pieces. Crush the ginger and set all ingredients aside.
  4. Sauté the Ingredients:

    • In a large skillet or wok, heat a little oil over medium heat. Add the sliced onion, garlic, red chili, and bird’s eye chilies. Sauté until the onions become translucent and the mixture is fragrant.
  5. Add the Sauces and Seasonings:

    • Stir in the chopped tomato and cook until softened. Add the oyster sauce, sweet soy sauce, sugar, and salt. Adjust the quantities to taste, balancing the sweet and savory flavors. Pour in a small amount of water to create a flavorful sauce base.
  6. Combine Chicken and Sauce:

    • Add the cooked chicken pieces into the skillet with the sauce. Stir well to coat the chicken evenly with the sauce. Add the bay leaves for additional aroma.
  7. Simmer and Finish:

    • Allow the chicken to simmer in the sauce for about 10 minutes, or until the flavors meld and the sauce thickens slightly. Taste and adjust the seasoning if necessary.
  8. Serve:

    • Remove the bay leaves before serving. Your Ayam Kecap is now ready to enjoy. Serve hot with steamed rice or as a flavorful side dish.

Tips:

  • For a spicier kick, adjust the number of bird’s eye chilies according to your heat preference.
  • Ensure the chicken is well-coated with the sauce for maximum flavor.

Enjoy this authentic Indonesian dish with your family and friends for a taste of the vibrant flavors of Indonesia right at your dinner table!
