Ayam Kuah Kecap (Sweet Soy Sauce Chicken)
Ingredients:
- 500 grams chicken breast, diced into 2 cm cubes
- 2 cloves garlic
- 1 teaspoon whole black pepper (or ground black pepper as a substitute)
- 2 tablespoons sweet soy sauce (kecap manis)
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
- 1 tablespoon sugar (adjust to taste)
- 1 tablespoon sesame oil (adjust to taste)
- 1 stalk green onion, sliced diagonally
- 2 tablespoons cooking oil
- 650 ml water
Instructions:
-
Prepare the Spice Paste: Begin by finely grinding the garlic and black pepper together to form a paste. Heat the cooking oil in a pan over medium heat. Add the garlic and pepper paste and sauté until fragrant. Add a splash of water to keep the mixture moist and prevent burning.
-
Cook the Chicken: Add the diced chicken to the pan. Pour in the water and stir gently to ensure that the chicken pieces are separated and not clumped together.
-
Simmer the Sauce: Once the mixture reaches a boil, stir in the sweet soy sauce, ground nutmeg, salt, and sugar. Continue cooking until the chicken is fully cooked and the sauce has reduced to your desired consistency.
-
Finish with Green Onions: Once the chicken is cooked through, add the sliced green onions to the pan. Gently stir to combine.
-
Serve: Remove from heat and serve hot. This dish pairs beautifully with steamed rice.
