Ayam Kuah Kecap (Sweet Soy Sauce Chicken)

Ingredients:

  • 500 grams chicken breast, diced into 2 cm cubes
  • 2 cloves garlic
  • 1 teaspoon whole black pepper (or ground black pepper as a substitute)
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 tablespoon sugar (adjust to taste)
  • 1 tablespoon sesame oil (adjust to taste)
  • 1 stalk green onion, sliced diagonally
  • 2 tablespoons cooking oil
  • 650 ml water

Instructions:

  1. Prepare the Spice Paste: Begin by finely grinding the garlic and black pepper together to form a paste. Heat the cooking oil in a pan over medium heat. Add the garlic and pepper paste and sauté until fragrant. Add a splash of water to keep the mixture moist and prevent burning.

  2. Cook the Chicken: Add the diced chicken to the pan. Pour in the water and stir gently to ensure that the chicken pieces are separated and not clumped together.

  3. Simmer the Sauce: Once the mixture reaches a boil, stir in the sweet soy sauce, ground nutmeg, salt, and sugar. Continue cooking until the chicken is fully cooked and the sauce has reduced to your desired consistency.

  4. Finish with Green Onions: Once the chicken is cooked through, add the sliced green onions to the pan. Gently stir to combine.

  5. Serve: Remove from heat and serve hot. This dish pairs beautifully with steamed rice.
