Semur Ayam Tahu Kentang
Ingredients:
- 1/2 kg chicken, cut into pieces
- 1/4 kg potatoes, peeled and cubed
- 10 pieces fried tofu, cut into triangles
- 5 shallots
- 4 cloves garlic
- 1 thumb-sized piece ginger
- 1 thumb-sized piece galangal
- 2 stalks lemongrass
- 2 bay leaves
- 2 kaffir lime leaves
- Sugar and salt, to taste
- Sweet soy sauce, to taste
Instructions:

Prepare the Aromatics:
Begin by finely grinding the shallots, garlic, ginger, and galangal. Crush the lemongrass stalks to release their flavor. In a large pan, heat a bit of oil over medium heat and sauté the ground aromatics along with the crushed lemongrass until fragrant. Add the bay leaves and kaffir lime leaves, followed by salt and sugar. Continue to sauté until the mixture is aromatic and golden. -
Simmer the Base:
Pour in 1 liter of water and bring to a boil. Once boiling, add the sweet soy sauce according to your taste preferences. Stir well to combine. -
Cook the Chicken:
Add the chicken pieces to the pot. Allow the chicken to simmer in the flavorful base until it is partially cooked and tender, about 20-30 minutes. -
Add Tofu and Potatoes:
Next, introduce the fried tofu and cubed potatoes to the pot. Continue to cook until the potatoes are tender and the tofu has absorbed the flavors, approximately 15-20 minutes. -
Finish and Serve:
