Grilled Catfish with Happycall

Ingredients:

For the Catfish:

  • 7 catfish (cleaned and gutted)

For the Marinade:

  • 5 cloves garlic
  • 5 cm ginger
  • 1 teaspoon ground coriander
  • Salt, to taste
  • Water, as needed

For the Glaze:

  • 4 shallots
  • 3 cloves garlic
  • 2 candlenuts (kemiri)
  • Salt, to taste
  • Sweet soy sauce (kecap manis), to taste

Instructions:

  1. Prepare the Catfish: Start by cleaning the catfish thoroughly. Remove the gills and any internal organs, then rinse the fish under cold water to ensure it’s completely clean.

  2. Make the Marinade: In a blender or food processor, combine the garlic, ginger, and ground coriander. Blend until smooth. Heat a small amount of oil in a pan and sauté the blended mixture until fragrant. Add a little water and salt to create a marinade. Simmer briefly to allow the flavors to meld, then remove from heat.

  3. Marinate the Catfish: Gently place the cleaned catfish into the marinade. Let it simmer for about 5 minutes, just enough to infuse some flavor without breaking down the fish. Remove the fish from the marinade and set aside.

  4. Prepare the Glaze: In a blender or food processor, combine the shallots, garlic, and candlenuts. Blend until you achieve a smooth paste. Mix in sweet soy sauce and salt to taste. Adjust the seasoning according to your preference.

  5. Glaze the Catfish: Brush the marinated catfish with the prepared glaze, ensuring all sides are well-coated.

  6. Grill the Catfish: Preheat your Happycall pan over medium heat. Place the glazed catfish into the pan. Grill until the fish is golden brown and cooked through, flipping occasionally to ensure even cooking. This should take about 10-15 minutes.
