Sweet Grilled Gourami Recipe

Ingredients:

  • 1 whole gourami fish
  • 3 tablespoons sweet soy sauce
  • 2 tablespoons butter
  • 1 tablespoon palm sugar
  • 1 teaspoon salt

For the Spice Paste:

  • 10 shallots
  • 7 cloves garlic
  • 5 candlenuts

Instructions:

  1. Prepare the Fish: Begin by cleaning the gourami thoroughly. Rub it with lime juice and salt, then let it sit for 15 minutes to marinate. This process will help to infuse the fish with flavor and ensure a clean taste.

  2. Cook the Spice Paste: In a pan, heat a bit of oil and sautรฉ the ground spice paste made from shallots, garlic, and candlenuts until aromatic and fully cooked. Once the paste is fragrant and golden, remove it from the heat and let it cool. After cooling, rub a portion of the spice paste onto the fish, ensuring it is evenly coated.

  3. Prepare the Glaze: In a bowl, combine the remaining spice paste with butter, palm sugar, and sweet soy sauce. Stir the mixture until the ingredients are well blended and the sugar is dissolved, creating a flavorful glaze.

  4. Grill the Fish: Preheat your grill to medium-high heat. Brush the fish with the prepared glaze, ensuring it is well-coated. Place the fish on the grill and cook, turning occasionally, until the fish is cooked through and has a caramelized exterior. Baste the fish with additional glaze as it cooks to enhance the flavor and keep it moist.

  5. Adjust Seasoning and Serve: Taste and adjust the seasoning if necessary. Serve the grilled gourami with a side of sambal (spicy chili paste) and lime wedges for a refreshing contrast.

This sweet grilled gourami pairs wonderfully with steamed rice and a simple vegetable side, offering a delightful blend of savory, sweet, and tangy flavors that are sure to impress at any meal.
