Gurami in Sweet Soy Sauce (Gurami Masak Kecap)

Ingredients

  • 500 grams of fresh gurami (gourami fish)
  • Coriander to taste
  • 2 cloves of garlic
  • Turmeric to taste

Ground Spices:

  • 3 candlenuts
  • 3 cloves of garlic
  • 5 cloves of garlic

Additional Ingredients:

  • Sweet soy sauce to taste
  • Sugar and salt to taste
  • Lime juice to taste
  • Water to taste
  • Cooking oil to taste

Instructions

  1. Prepare the Fish:

    • Thoroughly clean the gurami fish. Rub it with lime juice and let it sit for 5 minutes to remove any fishy odor. Rinse the fish again with clean water.
    • Make shallow cuts on both sides of the fish. This helps the marinade penetrate better and ensures even cooking.
  2. Marinate the Fish:

    • Blend the garlic, coriander, turmeric, and salt into a paste. Rub this mixture all over the fish, making sure to get it into the cuts.
    • Let the fish marinate for at least 15 minutes.
  3. Fry the Fish:

    • Heat enough cooking oil in a large frying pan over medium heat. Once hot, fry the fish until it turns golden brown and crispy on both sides. Remove the fish and set it aside on paper towels to drain excess oil.
  4. Prepare the Sauce:

    • In a separate pan, heat a little oil over medium heat. Sauté the finely chopped onion until it becomes fragrant and translucent.
    • Add the ground spices (candlenuts, garlic, and more garlic) to the pan. Continue to sauté until the spices are well-cooked and aromatic.
  5. Combine and Cook:

    • Add sweet soy sauce, sugar, and salt to the pan. Adjust the seasonings to taste.
    • Pour in a bit of water to create a sauce. Let it simmer for a few minutes to allow the flavors to meld together.
    • Place the fried fish into the pan with the sauce. Spoon the sauce over the fish and let it cook for a few more minutes, allowing the fish to absorb the flavors.
  6. Serve:

    • Transfer the fish to a serving platter and drizzle the remaining sauce over the top.
    • Garnish with extra lime juice if desired, and serve hot with steamed rice.
