Tongkol Kecap Recipe
Ingredients:
- 2 baskets of tongkol (skipjack tuna)
- For the Seasoning:
- 2 cloves of garlic
- 3 shallots
- 4 red chilies
- 1 tomato
- Oyster sauce
- Sweet soy sauce (kecap manis)
Instructions:

Fry the Tongkol:
- Heat oil in a pan and fry the tongkol pieces. Be careful not to cook them too long as they might become tough; a short frying time is sufficient.

Prepare the Seasoning:
- Thinly slice the garlic, shallots, red chilies, and tomato.

Sauté the Aromatics:
- In a separate pan, heat a little oil over medium heat. Add the sliced shallots and garlic. Sauté until fragrant and translucent.

Add the Chilies and Tomato:
- Add the sliced red chilies and tomato to the pan with the sautéed shallots and garlic. Cook for a few minutes until the tomato begins to break down.

Combine Ingredients:
- Add the fried tongkol pieces to the pan. Pour in some water to create a sauce, then season with salt, sweet soy sauce (kecap manis), and oyster sauce.

Simmer and Serve:
- Stir everything well and let it simmer until the sauce thickens and the flavors meld together, with the liquid reducing slightly. Adjust seasoning as needed.

Final Touches:
- Once the sauce has thickened and coats the tongkol nicely, remove from heat. Serve hot.
