Tongkol Kecap Recipe

Ingredients:

  • 2 baskets of tongkol (skipjack tuna)
  • For the Seasoning:
    • 2 cloves of garlic
    • 3 shallots
    • 4 red chilies
    • 1 tomato
    • Oyster sauce
    • Sweet soy sauce (kecap manis)

Instructions:

  1. Fry the Tongkol:

    • Heat oil in a pan and fry the tongkol pieces. Be careful not to cook them too long as they might become tough; a short frying time is sufficient.
  2. Prepare the Seasoning:

    • Thinly slice the garlic, shallots, red chilies, and tomato.
  3. Sauté the Aromatics:

    • In a separate pan, heat a little oil over medium heat. Add the sliced shallots and garlic. Sauté until fragrant and translucent.
  4. Add the Chilies and Tomato:

    • Add the sliced red chilies and tomato to the pan with the sautéed shallots and garlic. Cook for a few minutes until the tomato begins to break down.
  5. Combine Ingredients:

    • Add the fried tongkol pieces to the pan. Pour in some water to create a sauce, then season with salt, sweet soy sauce (kecap manis), and oyster sauce.
  6. Simmer and Serve:

    • Stir everything well and let it simmer until the sauce thickens and the flavors meld together, with the liquid reducing slightly. Adjust seasoning as needed.
  7. Final Touches:

    • Once the sauce has thickened and coats the tongkol nicely, remove from heat. Serve hot.
