Tongkol Orak Arik Recipe
Ingredients:
- 1 whole tongkol fish (skipjack tuna), cut into pieces
- 6 shallots
- 2 cloves garlic
- 2 red chilies
- 1 small tomato
- Sweet soy sauce (kecap manis), to taste
- 1 cube of Royco seasoning (optional)
- Salt, to taste
- Sugar, to taste
- Cooking oil
Instructions:

Prepare the Fish:
- Clean the tongkol fish and cut it into bite-sized pieces. Set aside.

Prepare the Aromatics:
- Slice the shallots, garlic, red chilies, and tomato into small pieces.

Sauté the Aromatics:
- Heat a generous amount of cooking oil in a pan over medium heat.
- Add the sliced shallots, garlic, red chilies, and tomato to the hot oil.
- Sauté until the mixture becomes fragrant and slightly browned.

Cook the Fish:
- Add the cut fish pieces to the pan.
- Stir and cook the fish with the aromatics, making sure it is well-coated with the flavors.

Season the Dish:
- Sprinkle in a cube of Royco seasoning if using, and season with salt and a bit of sugar.
- Stir the mixture well.

Add Sweet Soy Sauce:
- Pour in sweet soy sauce (kecap manis) to taste.
- Continue to stir and cook until the fish is cooked through and the sauce has reduced to a desired thickness.

- Once the fish is fully cooked and the sauce has thickened, remove from heat.
- Serve the Tongkol Orak Arik hot with steamed rice or as part of a larger meal.
