Ayam Suwir with Sweet Soy Sauce

Ingredients:

  • 500 grams of pre-fried chicken, shredded
  • 7 shallots, peeled, washed, and thinly sliced
  • 5 cloves of garlic, peeled, washed, and thinly sliced
  • 9 large red chilies, washed and thinly sliced
  • 3 kaffir lime leaves
  • 3 bay leaves
  • 4 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce (kecap asin)
  • Fresh scallions, washed and thinly sliced (to taste)
  • Fine salt (to taste)
  • Granulated sugar (to taste)
  • Water (as needed)

Instructions:

  1. Sauté the Aromatics:

    • In a skillet over medium heat, add a splash of oil. Once hot, sauté the shallots, garlic, red chilies, kaffir lime leaves, bay leaves, and scallions. Cook until fragrant and the shallots are translucent.
  2. Add Chicken and Sauces:

    • Incorporate the shredded chicken into the skillet. Stir in the sweet soy sauce and soy sauce. Add enough water to create a sauce that will cover the chicken. Allow the mixture to come to a boil, stirring occasionally.
  3. Season and Simmer:

    • Once boiling, adjust the seasoning with fine salt and granulated sugar to taste. Let the mixture simmer for 5-10 minutes or until the liquid has reduced and thickened to your desired consistency. Stir occasionally to prevent sticking.
  4. Finish and Serve:

    • When the sauce has thickened and the flavors are well combined, turn off the heat. Serve the Ayam Suwir hot as a main dish or side.

Notes:

  • This dish is a favorite of my husband for its delicious flavor and healthy preparation, free from MSG or other instant flavor enhancers. Enjoy this flavorful and aromatic chicken dish with rice or as part of a larger meal.

Tips:

  • For extra flavor, you can add a splash of lime juice or a sprinkle of fresh cilantro before serving.
  • Adjust the level of spiciness by varying the amount of red chilies used.
