Ayam Suir Kecap (Shredded Chicken in Sweet Soy Sauce)

Ingredients:

  • 1/2 kg chicken, shredded
  • 5 tablespoons sweet soy sauce (preferably thick sweet soy sauce like Kecap Bangau)
  • 5 chicken gizzards
  • 5 bird’s eye chilies
  • 5 large red chilies, thinly sliced
  • 5 shallots
  • 2 cloves garlic
  • 1 onion, thinly sliced
  • 2 candlenuts
  • Ground pepper, to taste
  • Chicken seasoning powder, to taste
  • 2 stalks lemongrass, bruised
  • 2 bay leaves
  • 1 tomato, thinly sliced
  • Salt, to taste
  • Cooking oil

Instructions:

  1. Prepare the Chicken: Boil the chicken and gizzards until cooked. Drain and shred the chicken into small pieces. Reserve the broth.

  2. Prepare the Spice Paste: Grind together shallots, garlic, bird’s eye chilies, candlenuts, and salt until smooth. Bruise the lemongrass.

  3. Cooking Process:

    • Heat cooking oil in a pan. Sauté the ground spice paste with sliced onion, sliced tomatoes, sliced red chilies, bay leaves, and bruised lemongrass until fragrant.
    • Add the shredded chicken and mix well with the spices.
    • Pour in enough reserved chicken broth to cover the chicken. Season with chicken seasoning powder and ground pepper. Bring to a boil.
  4. Finishing Touches: Stir in sweet soy sauce and continue boiling for 15 minutes until the sauce thickens and coats the chicken evenly.

  5. Serve: Ayam Suir Kecap is ready to be served hot with steamed rice.
