Ayam Suir Kecap (Shredded Chicken in Sweet Soy Sauce)
Ingredients:
- 1/2 kg chicken, shredded
- 5 tablespoons sweet soy sauce (preferably thick sweet soy sauce like Kecap Bangau)
- 5 chicken gizzards
- 5 bird’s eye chilies
- 5 large red chilies, thinly sliced
- 5 shallots
- 2 cloves garlic
- 1 onion, thinly sliced
- 2 candlenuts
- Ground pepper, to taste
- Chicken seasoning powder, to taste
- 2 stalks lemongrass, bruised
- 2 bay leaves
- 1 tomato, thinly sliced
- Salt, to taste
- Cooking oil
Instructions:

Prepare the Chicken: Boil the chicken and gizzards until cooked. Drain and shred the chicken into small pieces. Reserve the broth.

Prepare the Spice Paste: Grind together shallots, garlic, bird’s eye chilies, candlenuts, and salt until smooth. Bruise the lemongrass.

Cooking Process:
- Heat cooking oil in a pan. Sauté the ground spice paste with sliced onion, sliced tomatoes, sliced red chilies, bay leaves, and bruised lemongrass until fragrant.
- Add the shredded chicken and mix well with the spices.
- Pour in enough reserved chicken broth to cover the chicken. Season with chicken seasoning powder and ground pepper. Bring to a boil.

Finishing Touches: Stir in sweet soy sauce and continue boiling for 15 minutes until the sauce thickens and coats the chicken evenly.
