Toge Tahu Kecap: A Flavorful Indonesian Stir-Fry with Tofu and Bean Sprouts

Ingredients:

  • 1 cup fresh bean sprouts (toge)
  • 4 pieces fried tofu (brown in color)
  • 2 cloves garlic
  • 1 small onion
  • 5 red curly chilies
  • 5 green curly chilies
  • 3 red bird’s eye chilies
  • 1 tablespoon sweet soy sauce (kecap manis)
  • Salt, to taste
  • Sugar, to taste

Instructions:

  1. Prepare the Ingredients: Begin by thoroughly cleaning the bean sprouts and setting them aside. Slice the garlic, onion, red curly chilies, green curly chilies, and red bird’s eye chilies into thin pieces.

  2. Sauté Aromatics: Heat a little oil in a pan over medium heat. Add the sliced garlic and onion to the pan and sauté until they release a fragrant aroma.

  3. Add Chilies and Seasonings: Once the garlic and onion are fragrant, add the sliced chilies to the pan. Continue to sauté for a minute or two. Next, pour in enough water to create a light sauce. Stir in the sweet soy sauce, salt, and sugar to taste. Mix well to combine the flavors.

  4. Incorporate Bean Sprouts and Tofu: Add the cleaned bean sprouts and fried tofu pieces into the pan. Stir gently to coat the ingredients with the sauce and ensure they are heated through.

  5. Serve: Once everything is well-mixed and heated, your Toge Tahu Kecap is ready to be served. This dish is perfect as a side or a main course, offering a delightful combination of textures and flavors.

Enjoy this flavorful Indonesian stir-fry that combines the crunch of bean sprouts with the savory taste of tofu, all enhanced by a rich, sweet soy sauce!
