1 Begin by thoroughly washing the apricots. Once clean, dry them with a cloth. Cut each apricot in half, removing the pit.
2 Peel and slice the red spring onions thinly.
3 Prepare the jalapeño pepper by cutting off the stem and slicing it in half lengthwise. Carefully remove the seeds using a knife to avoid too much heat.
4 In a large saucepan, combine the apricots, sliced onions, jalapeño pepper halves, and rice vinegar.
5 Add the dark brown sugar to the pot and stir the mixture gently to combine all the ingredients.
6 Cover the saucepan with a lid, and bring the mixture to a simmer over medium heat. Let it cook for about 30 minutes, occasionally stirring, until the chutney thickens and the apricots break down.
7 Once the chutney reaches a syrupy consistency, remove it from the heat and allow it to cool. The chutney will thicken further as it cools.
