Sweet and Spicy Beef Abon Recipe
Ingredients:
- 1 kg beef (cut into small pieces)
- 1 tsp coriander seeds
- 100 g palm sugar (finely grated)
- 1 tbsp salt
- 50 g red chilies (deseeded for less heat, if desired)
- 50 g garlic cloves
- 1 thumb-sized piece of ginger
- 1 tbsp granulated sugar
- 2 tbsp tamarind water
- 150 g shallots (sliced thinly)
- 4 candlenuts
- 1 thumb-sized piece of galangal

Cook the Beef:
- Place the beef pieces in a large pot. Cover with water and simmer over medium heat until the beef is tender. This may take about 1-2 hours depending on the cut of beef and your stove.

- Using a food processor or mortar and pestle, blend together the red chilies, garlic, ginger, candlenuts, and galangal until you have a smooth paste.

- Once the beef is tender, drain it and let it cool slightly.
- Pound the cooked beef with a mortar and pestle until it becomes a coarse, shredded texture. Alternatively, you can use a food processor for this step.

Mix the Beef with Spice Paste:
- In a large mixing bowl, combine the shredded beef with the spice paste, palm sugar, granulated sugar, salt, and tamarind water. Stir well to ensure the beef is thoroughly coated with the spice mixture.

Fry the Mixture:
- Heat a generous amount of oil in a deep pan or wok over medium heat. The oil should be enough to submerge the beef mixture.
- Add the thinly sliced shallots to the hot oil and fry until golden and crispy. Remove with a slotted spoon and drain on paper towels.
- In the same oil, add the beef mixture. Fry, stirring continuously to prevent sticking and burning. Continue to cook for about 1 hour, or until the beef is crispy and has reduced significantly.

Finish and Serve:
- Once the beef is crispy and the oil has mostly evaporated, remove from heat and drain on paper towels.
- Allow to cool completely before storing in an airtight container.
