Sweet and Spicy Fried Eggs

Ingredients:

  • 4 eggs
  • 5 green bird’s eye chilies, sliced diagonally
  • 6 devil’s chili peppers, sliced diagonally
  • 5 shallots, thinly sliced
  • Salt to taste
  • Sugar to taste
  • 1 sachet of sweet soy sauce (Kecap Bango)
  • 1/2 cup water

Instructions:

  1. Fry the Eggs: Begin by frying the eggs to your desired doneness. Once cooked, set them aside on a plate.

  2. Prepare the Chili Mixture: In a skillet or wok, heat a small amount of oil and sauté the shallots until they turn a golden brown. Add the sliced green bird’s eye chilies and devil’s chili peppers to the pan. Stir-fry until the chilies are fragrant and slightly softened.

  3. Create the Sauce: Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer for a few minutes, allowing the flavors to meld together.

  4. Season the Sauce: Season the sauce with salt and sugar according to your taste preferences. Stir in the sweet soy sauce and cook until the sauce thickens slightly.

  5. Combine and Serve: Pour the prepared sauce over the fried eggs. Ensure that the eggs are well-coated with the flavorful sauce. Serve immediately for a delightful blend of sweet and spicy flavors.

Enjoy your Sweet and Spicy Fried Eggs as a flavorful addition to any meal or as a delicious standalone dish!
