Sweet and Spicy Beef Tongseng Without Coconut Milk
Ingredients:
- 1 handful of beef (sliced thinly for stir-frying)
- 2 handfuls of cabbage (shredded or as desired)
- 1 red tomato (cut into wedges)
- 1 tablespoon of grated brown sugar
- 1 packet of chicken flavor seasoning (like Masako)
- 1/2 packet of black pepper (e.g., Ladaku brand)
- 1 tablespoon of sweet soy sauce (kecap manis)
- 1/2 cup of water (adjust to add more broth if preferred)
For the Spice Paste:
- 5 red shallots
- 2 cloves of garlic
- 3 curly red chilies
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
- 10 small red chilies (adjust to taste)
- 1 candlenut
- 3 tablespoons of cooking oil (for sautéing)
Instructions:

Prepare the Spice Paste:
- Blend the shallots, garlic, red chilies, ginger, turmeric, red chilies, and candlenut into a smooth paste.

Sauté the Spice Paste:
- Heat the cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant.

Cook the Beef:
- Add the sliced beef to the pan. Cook until the beef changes color and the oil starts to separate from the spice paste.

- Pour in 1/2 cup of water. Bring to a boil, then reduce the heat and simmer until the beef is tender.

- Stir in the chicken seasoning, black pepper, grated brown sugar, and sweet soy sauce. Mix well.
