  1. Heat the Oil
    Begin by heating oil in a kadhai (wok) on medium heat. Once the oil is hot, add the broken bay leaf and cinnamon stick. Sauté for about 10 seconds until fragrant.

    Add the pureed tomatoes to the kadhai, followed by turmeric powder, coriander powder, and red chili powder. Stir everything together and cook for about 10 minutes. This allows the spices to blend with the tomatoes and creates a rich gravy.
