Sweet and Spicy Salmon with Fried Potatoes

Ingredients

  • Salmon fillet: 1 piece
  • Potato: 1/2, peeled and cut into chunks
  • Onion: 3 cloves, finely chopped
  • Garlic: 2 cloves, minced
  • Shallots: 3, finely chopped
  • Chili: 1, sliced
  • Tomato: as needed, chopped
  • Sugar: to taste
  • Salt: to taste
  • Pepper: to taste
  • Oyster sauce: 1-2 tablespoons
  • Green onions: for garnish

Instructions

  1. Prepare the Salmon:

    • Season the salmon fillet with salt and pepper.
    • Heat a small amount of oil in a pan over low heat.
    • Place the salmon in the pan and cook gently until the fish is fully cooked through and flakes easily with a fork. Set aside.
  2. Fry the Potatoes:

    • Heat oil in a frying pan over medium heat.
    • Add the potato chunks and fry until golden brown and crispy. Remove from the pan and drain on paper towels. Season with salt.
  3. Prepare the Sauce:

    • In a blender or food processor, combine the onion, garlic, shallots, and chili. Blend until smooth.
    • Heat oil in a pan over medium heat. Add the blended mixture and cook until fragrant and the oil starts to separate.
    • Add the chopped tomatoes and continue cooking until the tomatoes have broken down and the sauce has thickened.
    • Season with sugar, salt, pepper, and oyster sauce to taste.
  4. Combine and Serve:

    • Gently fold the cooked salmon into the sauce, allowing it to absorb the flavors.
    • Serve the salmon with a side of crispy fried potatoes.
    • Garnish with chopped green onions for a fresh touch.
