Preparation Time: 15 minutes

Cooking Time: 40 minutes

Instructions

  1. Marinate the Paneer:
Begin by preparing the marinade for the paneer. In a mixing bowl, combine Thai Red Curry Paste, Sriracha sauce, the juice of 1 lemon, finely chopped garlic, green chillies, salt, pepper, and oil. Stir well to ensure all the ingredients are fully combined and smooth.

  2. Marinate the Paneer Pieces:
Add the paneer squares to the marinade, tossing gently to coat every piece with the flavorful mixture. Be sure to handle the paneer carefully to avoid breaking the cubes. Once the paneer is well-marinated, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

  3. Prepare the Grill:
While the paneer marinates, soak your skewers in water to prevent them from burning. Preheat your grill pan or outdoor grill. Brush 2 tablespoons of oil onto the grill pan to prevent sticking.

  4. Grill the Marinated Paneer:
Once the grill is hot, thread the marinated paneer onto the soaked skewers. Place the skewers on the grill, and cook for about 2-3 minutes on each side. Ensure the paneer gets a nice char without overcooking it, as this can make it rubbery. As the paneer grills, baste it with the remaining marinade or some additional oil or melted butter to keep it moist and flavorful.

  5. Garnish and Serve:
Once the Thai Style Paneer is grilled to perfection, remove it from the skewers and transfer it onto a serving plate. For an added burst of flavor and texture, garnish the grilled paneer with toasted sesame seeds, roasted peanuts, chopped spring onion greens, and fresh coriander leaves. Serve with a few lemon wedges and some sliced onions on the side.

  6. Serving Suggestion:
Serve the Sweet And Spicy Thai Style Paneer with Chilli Coriander Fried Rice and Roasted Eggplant in Schezwan Sauce for a complete meal that combines a variety of textures and rich flavors.
