Sweet Sushi with Mixed Jams

Instructions:

  1. Prepare the Sweet “Seaweed” from Strawberries:
    Start by washing the strawberries thoroughly under fresh running water, then remove the green stems. Place the strawberries in a small saucepan and add the orange marmalade along with the sugar. Stir well. Using a fine mesh sieve, filter the mixture to remove any seeds and pulp, ensuring you have a smooth, homogeneous strawberry mixture.

  2. Prepare the Rice Pudding:
    Line the bottom of an inverted baking tray with acetate (alternatively, you can use a silicone mat or parchment paper). Pour the smooth strawberry mixture onto the tray, spreading it into a rectangle about 15×25 cm in size, with a thickness of 2 mm.

    In another saucepan, add the milk, sugar, and the vanilla pod (cut open to scrape the seeds out). Bring the milk to a near-boil over medium heat, then remove the vanilla pod with tongs. Add the rinsed Carnaroli rice to the milk, reduce the heat to low, and cook for 20-25 minutes until the milk is absorbed by the rice, leaving you with a creamy, thick rice pudding.

  3. Chill and Set the “Seaweed”:
    Once the rice pudding is ready, set it aside to cool in a bowl at room temperature. Meanwhile, pour the strawberry mixture into two separate saucepans and add 1 gram of agar agar to each. Stir with a spatula until the agar agar completely dissolves. Heat the mixture gently until it reaches a simmer, then allow it to cook for a couple of minutes.

  4. Prepare the Jam Fillings:
    Take the orange marmalade and berry jam, and pour them into two separate small molds lined with parchment paper, each measuring approximately 8x5x4 cm. Let them set in the fridge for the necessary time until they firm up.

  5. Assemble the Sweet Sushi:
    Once the strawberry “seaweed” has cooled down, carefully trim the edges with a knife to make them even. Place the sheet of strawberry mixture onto a piece of plastic wrap (or parchment paper if you prefer). Transfer this sheet onto a bamboo mat, if available. If not, the plastic wrap will still do the trick.

    Spread the cooled rice pudding over the strawberry sheet, leaving about 2 cm of space from the top edge. Lightly press the rice pudding with your fingers to create a slight indentation down the center. This will be where you place your jam fillings.

    Cut the chilled jams into thin strips and lay them down inside the rice pudding, ensuring the layers are placed about 3 cm from the top edge. Use the plastic wrap to help you gently roll the sushi, pressing the long sides together to create a square or cylindrical shape (if using parchment paper, the roll will have a more rounded form).

  6. Slice and Serve:
    Once your sweet sushi is rolled up, use a sharp knife to cut it into 12 pieces, carefully slicing through the layers of fruit and rice. Serve immediately and enjoy this unique, delicious dessert that combines the fresh taste of strawberries with the comforting creaminess of rice pudding and the sweetness of homemade jams.
