Khajur Imli Chutney (Dates Tamarind Chutney)

Ingredients:

  • 1-1/2 cups chopped dates
  • 1/2 cup tamarind paste
  • 1/2 cup jaggery
  • 2 teaspoons red chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon ginger powder
  • 1 teaspoon black salt or rock salt
  • Salt to taste

Preparation Time: 10 minutes

Cook Time: 20 minutes

Instructions:

  1. Begin by heating 1-1/2 cups of water in a saucepan. Bring it to a boil.
  2. Add the chopped dates to the boiling water and cook until the dates become soft and tender.
  3. Once the dates are soft, add tamarind paste, jaggery, red chili powder, cumin powder, ginger powder, black salt, and regular salt. Stir well.
  4. Allow the mixture to cook for another 5 minutes, allowing all the flavors to combine.
  5. Turn off the heat and let the chutney mixture cool down.
  6. Once cooled, transfer the mixture to a blender or mixer grinder and blend into a smooth paste.
  7. Sieve the chutney mixture to ensure it’s smooth and free of any remaining chunks.
  8. Store your freshly made Khajur Imli Chutney in an airtight container in the refrigerator.
