Ingredients:
- 1-1/2 cups chopped dates
- 1/2 cup tamarind paste
- 1/2 cup jaggery
- 2 teaspoons red chili powder
- 2 teaspoons cumin powder
- 1 teaspoon ginger powder
- 1 teaspoon black salt or rock salt
- Salt to taste

Instructions:
- Begin by heating 1-1/2 cups of water in a saucepan. Bring it to a boil.
- Add the chopped dates to the boiling water and cook until the dates become soft and tender.
- Once the dates are soft, add tamarind paste, jaggery, red chili powder, cumin powder, ginger powder, black salt, and regular salt. Stir well.
- Allow the mixture to cook for another 5 minutes, allowing all the flavors to combine.
- Turn off the heat and let the chutney mixture cool down.
- Once cooled, transfer the mixture to a blender or mixer grinder and blend into a smooth paste.
- Sieve the chutney mixture to ensure it’s smooth and free of any remaining chunks.
- Store your freshly made Khajur Imli Chutney in an airtight container in the refrigerator.
