- 1 large onion (bawang bombay)
- 4 cloves garlic (bawang putih)
- 2 scallions (daun bawang)
- 1 carrot (wortel)
- 1 cucumber (timun)
- 4 tablespoons tomato sauce (saus tomat)
- 1 tablespoon oyster sauce (saus tiram)
- 1 tablespoon soy sauce (kecap asin)
- 1 tablespoon fish sauce (kecap ikan)
- Salt, to taste (secukupnya garam)
- Flour, for coating (optional)
Instructions:
-
Prepare the Vegetables:
- Finely chop the scallions, garlic, and onion. Set aside.
-
Prepare the Mackerel:
- If desired, lightly coat the mackerel fillets with flour. This step is optional but helps to achieve a crispier texture when frying.
-
Fry the Mackerel:
- Heat oil in a frying pan over medium heat. Fry the mackerel until golden brown and crispy. Remove from the pan and drain on paper towels.
-
Cook the Sauce:
- In the same pan, add a bit more oil if necessary. Sauté the chopped scallions, garlic, and onion until fragrant and softened.
- Add the tomato sauce, oyster sauce, soy sauce, and fish sauce to the pan. Stir well and cook until the sauce has thickened.
-
Combine and Serve:
- Gently add the fried mackerel to the sauce, making sure the fillets are well-coated.
- Continue to cook for a few minutes to allow the flavors to meld together.
-
Garnish and Enjoy:
- Slice the carrot and cucumber into thin strips or small pieces for garnish, if desired.
- Serve the sweet and sour mackerel hot, garnished with additional scallions or fresh herbs if you like.
