Sweet and Sour Mackerel (Ikan Tengiri Asam Manis)

Ingredients:

  • 400 grams mackerel fish (ikan tengiri)
  • 1 large onion (bawang bombay)
  • 4 cloves garlic (bawang putih)
  • 2 scallions (daun bawang)
  • 1 carrot (wortel)
  • 1 cucumber (timun)
  • 4 tablespoons tomato sauce (saus tomat)
  • 1 tablespoon oyster sauce (saus tiram)
  • 1 tablespoon soy sauce (kecap asin)
  • 1 tablespoon fish sauce (kecap ikan)
  • Salt, to taste (secukupnya garam)
  • Flour, for coating (optional)

Instructions:

  1. Prepare the Vegetables:

    • Finely chop the scallions, garlic, and onion. Set aside.
  2. Prepare the Mackerel:

    • If desired, lightly coat the mackerel fillets with flour. This step is optional but helps to achieve a crispier texture when frying.
  3. Fry the Mackerel:

    • Heat oil in a frying pan over medium heat. Fry the mackerel until golden brown and crispy. Remove from the pan and drain on paper towels.
  4. Cook the Sauce:

    • In the same pan, add a bit more oil if necessary. Sauté the chopped scallions, garlic, and onion until fragrant and softened.
    • Add the tomato sauce, oyster sauce, soy sauce, and fish sauce to the pan. Stir well and cook until the sauce has thickened.
  5. Combine and Serve:

    • Gently add the fried mackerel to the sauce, making sure the fillets are well-coated.
    • Continue to cook for a few minutes to allow the flavors to meld together.
  6. Garnish and Enjoy:

    • Slice the carrot and cucumber into thin strips or small pieces for garnish, if desired.
    • Serve the sweet and sour mackerel hot, garnished with additional scallions or fresh herbs if you like.
