Ingredients for the Samosa Dough

Ajwain (Carom seeds) 1 tsp
Salt 1 pinch

Ingredients for the Chinese Filling

Carrot (Gajjar), finely chopped 1/2 cup
Green Bell Pepper (Capsicum), finely chopped 1/2 cup
Cabbage (Patta Gobi/Muttaikose), finely chopped 1/2 cup
Ginger, grated 1 inch
Garlic, finely chopped 3 cloves
Green Chilli, finely chopped 2
Spring Onion Greens, finely chopped 1/4 cup
Schezwan Sauce 1 tsp
Salt To taste
Black Pepper Powder To taste

Preparation Time: 10 minutes

Cooking Time: 45 minutes

Total Time: 55 minutes

Yield: Approximately 12 samosas


Instructions:

  1. Prepare the Samosa Dough:
    In a large mixing bowl, combine the whole wheat flour, sooji, ajwain, and a pinch of salt. Add Extra Virgin Olive Oil to the flour mixture and rub it in until you get a crumbly texture. Slowly add a little water at a time and knead the dough until it’s firm yet smooth. Cover the dough and let it rest while you prepare the filling.

  2. Prepare the Chinese Filling:
    Heat olive oil in a wok or heavy-bottomed pan. Add the grated ginger, chopped garlic, green chilies, and spring onion greens. Stir-fry for a few seconds until the aromas start to emerge.

    Add the carrot, green bell pepper, and cabbage. Stir-fry on high heat until the vegetables are cooked through but still firm.

  3. Combine with Noodles & Seasoning:
    Once the vegetables are cooked, add in the cooked noodles (roughly chopped), Schezwan sauce, salt, and black pepper powder. Stir well until everything is combined, and adjust the seasoning according to your taste. Turn off the heat and let the filling cool.

  4. Shape the Samosas:
    Preheat oil for deep frying in a pan. Divide the rested dough into 12 equal portions. Roll each portion into a small square, dusting lightly with flour. Place a spoonful of the cooled Chinese vegetable filling in the center of each square.

    Fold the edges to form a triangle shape (or like a wonton), pressing to seal the edges well so they stay intact during frying.

  5. Fry the Samosas:
    Carefully place the shaped Szechuan Style Chinese Veg Samosas into the hot oil. Fry on medium heat until they are crisp and golden brown. Once done, remove them from the oil and drain excess oil on a paper towel.

  6. Serving Suggestions:
