Instructions
1. Preparing the Tandoori Chicken:
Start by preparing the tandoori chicken. Take the chicken breasts and cut them into even cubes, which will be used to make the skewers. Transfer the chicken into a large bowl, and add the smoked paprika. Season with a pinch of salt. Grate some fresh ginger and add it to the bowl. Mix everything thoroughly, ensuring the ingredients are well combined and that the chicken takes on a uniform reddish color. Next, add the tandoori spice mix and stir it in until fully incorporated.
Cover the bowl with plastic wrap and allow the chicken to marinate in the fridge for at least 3 hours. For the best flavor, marinate the chicken overnight to ensure it absorbs all the flavors.

Flip the chapati and cook the other side. For the final step, place the chapati directly over a low flame for 5-6 seconds per side to give it a slight char. Repeat with the remaining portions.
4. Cooking the Tandoori Chicken:
Once your chicken is marinated, prepare your skewers by threading approximately 6 pieces of chicken onto each skewer, ensuring there is some space between each piece for even cooking. Line a baking tray with parchment paper to catch any juices released during cooking. Arrange the skewers on the tray, making sure they are suspended with the skewers resting on the sides of the tray, allowing the chicken to cook evenly without touching the tray.
Preheat your oven to 250°C (480°F) and set it to the grill setting. Place the tray with the skewers in the oven and cook for 10 minutes, turning the skewers halfway through the cooking time. The chicken should have a nice char on the outside, with the interior cooked through.
