Prepare the Pork Shank
Begin by preparing the pork shank. Use a sharp knife to make 5-6 deep cuts along the length of each shank. This will allow the marinade to penetrate deeply, ensuring that the pork absorbs all the amazing spices. Remove any excess skin and fat around the shank with a knife to ensure the meat is clean. -
Prepare the Marinade
Take the garlic clove, peel it, and remove the inner sprout to avoid any bitterness. In a blender or food processor, combine the garlic with the ground ginger. Add approximately 30 ml of water (about 2 tablespoons). Blend until a smooth paste forms. -
Mix the Marinade
In a large bowl, combine the garlic-ginger paste with the Greek yogurt, the juice of half a lemon, paprika, garam masala, and ground cumin. Stir well to create a smooth, homogenous marinade. -
Marinate the Pork
Coat the entire surface of the pork shank with the marinade, ensuring the cuts in the meat are filled with the spiced mixture. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight. The longer the pork marinates, the more flavorful it will be. -
Preheat the Oven
Preheat your oven to 160°C (320°F). This slow cooking temperature will allow the pork to become tender and absorb all the flavors from the marinade. -
Cook the Pork
Place the marinated pork shanks in the center of the oven on a rack. Bake for at least 3 hours, turning the meat occasionally to ensure even cooking. Every 30 minutes, brush the pork with clarified butter (ghee), which will help keep it moist and tender. The ghee also adds a rich, buttery flavor that will make the dish melt in your mouth. -
Serve
Once the pork is cooked through and tender, remove it from the oven. Let the meat rest for a few minutes before serving to allow the juices to redist
