Instructions:

  1. Preparing the Aam Panna Pani:

    • Begin by peeling the raw mango. Place the peeled mango in a pressure cooker along with 1/2 cup of water.
    • Cook the mango for 4 whistles on medium heat. Once done, turn off the heat and allow the pressure to release naturally.
    • Once the mango is cooked and soft, drain the water and let the mango cool. Remove the seed and extract the pulp into a bowl.
    • In the same bowl, add mint leaves, cumin powder, black salt, black pepper powder, and sugar to the mango pulp.
    • Transfer this mixture to a blender and grind it into a smooth puree.
    • Pour the aam panna into a serving bowl, add 1 cup of cold water, and mix well. Taste and adjust the spices or salt if needed.
    • Chill the aam panna pani in the refrigerator for at least 15 minutes before serving.
  2. Preparing the Pani Puri Filling:

    • In a mixing bowl, mash the boiled potatoes until smooth. Add the green moong sprouts to the mashed potatoes.
    • Sprinkle chaat masala, cumin powder, red chili powder, and a pinch of salt over the potato-sprout mixture.
    • Stir everything together until well combined. Taste the filling and adjust the seasoning if needed.
  3. Assembling the Aam Panna Pani Puri:

    • Gently crack open the top of each puri to create a small opening.
    • Stuff the puris with the prepared potato-sprouts filling.
    • Pour the chilled aam panna pani into each stuffed puri, ensuring the flavors seep in.
  4. Serving Suggestions:

    • Serve the Aam Panna Pani Puri as an appetizer or party snack.
    • For a complete meal, pair it with Rawal Pindi Style Chole, fluffy Bhaturas, and a side of Mumbai Style Tawa Pulao made with moong sprouts.
    • Finish the meal with a decadent dessert like Double Ka Meetha topped with mixed nuts and creamy rabri.

Enjoy the tangy, spicy, and refreshing Aam Panna Pani Puri – a unique twist to the classic street food, combining the delightful flavors of green mango with the crispiness of puris and a spicy potato filling!

Notes:

  • You can make the Aam Panna a day ahead and refrigerate it to save time.
  • For added spice, you can drizzle some tamarind chutney over the filling before pouring the aam panna pani into the puris.
  • If you want to enhance the cooling effect, add a few crushed ice cubes to the aam panna pani just before serving.

Recommended Pairing Dishes:

  1. Rawal Pindi Style Chole – A traditional North Indian chickpea dish, rich in flavors and spices, perfect for a hearty meal.
