Instructions:

  1. Prepare the Ingredients:
    Start by prepping all the ingredients. If you are using raw peanuts, dry roast them in a pan over medium heat until they turn golden brown and aromatic. Set the roasted peanuts aside to cool.

  2. Blanch and Peel Tomatoes:
    In a small pan, bring about a cup of water to a boil. Drop the tomatoes into the boiling water and blanch for about 5 minutes. Slit the tomatoes slightly at the top, making it easier to peel them. After blanching, peel the tomatoes, chop them, and set them aside to cool.

  3. Blend the Chutney:
    In a blender or food processor, add the roasted peanuts, chopped tomatoes, green chillies, garlic cloves, and tamarind. Blend everything together, adding a little water as needed to achieve a smooth and thick chutney consistency. Taste and adjust salt as desired. You can also add more tamarind if you like your chutney a bit tangier.

  4. Prepare the Tempering:
    Heat the oil in a small pan over medium heat. Once the oil is hot, add the mustard seeds. Allow them to splutter, and then add the white urad dal, dry red chilies, and curry leaves. Saute the mixture for a few seconds, allowing the dal to turn golden brown and crisp, and the spices to release their aromatic flavors.

  5. Combine and Serve:
    Pour the prepared tempering over the blended peanut chutney. Mix everything together thoroughly to allow the flavors to meld.

  6. Serve:
    Transfer the Andhra Style Peanut Chutney to a serving bowl and serve it immediately with dishes like idli, dosa, or uttapam. You can also pair it with rice or any South Indian meal of your choice.
