  1. Begin by heating ghee in a kadhai (wok) and sauté the finely chopped onions until they turn golden brown. Allow them to cool, then grind them into a smooth paste.

  2. In a pressure cooker, heat some more ghee and add the whole spices: cloves, cardamom, and cinnamon. Sauté for a few seconds until fragrant.

  3. Incorporate the grated ginger, garlic, and the finely chopped onions into the cooker. Sauté the mixture until the raw smell of the onions dissipates.

  4. Once the onions are well cooked, add the ground onion paste and sauté for an additional five minutes, allowing the flavors to meld.

  5. Now, add all the spice powders: red chili, turmeric, garam masala, and coriander, along with salt to taste. Mix well.

  6. At this stage, incorporate the yogurt and arbi. Toss everything together thoroughly, ensuring the arbi is coated with the spiced yogurt mixture.

  7. Close the pressure cooker and cook for about four whistles (approximately 10-15 minutes). Once done, allow it to cool before opening the lid.

  8. Once cooled, garnish the salan with rose leaves for a touch of elegance.
