Ingredients:
- 2 cups Rice
- 1.5 cups Arhar dal (Split Toor Dal)
- 2 Potatoes (Aloo), cut into cubes
- 1/2 cup Green peas (Matar)
- 1/2 cup Raw Mango, grated
- 1 Onion, finely chopped
- 2-inch Ginger, finely chopped
- 2 Green Chillies, finely chopped
- 1 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Red Chilli powder
- 1 teaspoon Cumin seeds (Jeera)
- 1/4 teaspoon Asafoetida (hing)
- 1.5 tablespoons Ghee
- 1 tablespoon Coriander leaves (Dhania), finely chopped (for garnish)
- Salt to taste

Instructions:

Begin by washing and soaking the rice and dal separately for 30 minutes.

Heat 1 tablespoon of ghee in a pressure cooker. Add cumin seeds and let them sizzle.

Add asafoetida and chopped onions to the cooker. Sauté until the onions turn translucent.

Add ginger and green chilies, sautéing for another minute.

Stir in the grated raw mango, mixing it well with the other ingredients.

Add the cubed potatoes, green peas, turmeric powder, and red chili powder. Mix everything and let it cook for 2 minutes.

Drain the soaked rice and tur dal, then add them to the pressure cooker.

Pour in 4 cups of water, season with salt, and close the lid of the pressure cooker. Cook the khichdi for 4 whistles.

After the pressure has released naturally, open the cooker, and mix the khichdi well.

Add the remaining 1/2 tablespoon of ghee, and garnish with freshly chopped coriander leaves.
