Asem-Asem Balungan & Tetelan Sapi Bumbu Uleg Recipe

Ingredients:

  • Beef:
    • 1/4 kg beef bones
    • 1/4 kg beef trimmings (tetelan)
  • Spice Paste (Bumbu Uleg):
    • 10 shallots
    • 3 cloves garlic
    • 1 tablespoon shrimp paste (terasi)
    • 2 cm galangal, grated
    • 3 curly red chilies
    • Salt, to taste
    • Sugar, to taste (Tropicana is preferred)
    • Seasoning powder (Masako), to taste
  • Vegetables:
    • Green beans, as needed
    • 1 carrot
    • 1 tomato
    • 3-4 tamarind pods (ripe tamarind)

Instructions:

  1. Prepare the Ingredients: Begin by gathering all your ingredients and preparing them for cooking. Cut the beef bones and trimmings into manageable pieces.

  2. Cook the Beef: Place the beef bones and trimmings into a pressure cooker. Cook until tender, which should take around 30 minutes. Once done, let the pressure cooker sit for about 15 minutes after removing it from the heat. This allows the steam to subside naturally before opening.

  3. Shred the Meat: Once the pressure cooker is safe to open, remove the beef pieces and cut them into bite-sized chunks. Transfer the meat and the broth to a new pot.

  4. Make the Spice Paste: Using a mortar and pestle or food processor, grind the shallots, garlic, shrimp paste, and grated galangal into a smooth paste. Add the curly red chilies and continue to grind until well mixed.

  5. Combine and Cook: Add the spice paste to the pot with the beef and broth. Stir well to incorporate the flavors. Next, add the green beans, carrot, and tomato. Stir again and let the mixture simmer until the vegetables are cooked through and the flavors meld together.

  6. Add Tamarind: Add the tamarind pods to the pot. These will provide a tangy flavor that complements the dish. Adjust the seasoning with salt, sugar, and seasoning powder to taste.

  7. Final Touches: Let the dish cook for a few more minutes to ensure all the flavors are well combined. If you prefer extra heat, you can add whole raw chilies at this stage.
