Oil For frying

For Tempering

Instructions

Step 1: Prepare the Badi (Dumplings)

  1. In a mixing bowl, combine gram flour, ajwain, kalonji, turmeric powder, chopped onion, salt, and red chilli powder.
  2. Gradually add water to form a thick, smooth paste. Let it rest for 15 minutes.
  3. Heat a kuzhi paniyaram pan (or use a deep frying pan) with enough oil.
  4. Scoop a tablespoon of the badi mixture into the pan’s hollows or oil and fry on both sides until golden brown. Remove and set aside.

Step 2: Prepare the Kadhi

  1. In a separate bowl, whisk together yogurt, gram flour, salt, turmeric powder, and red chilli powder.
  2. Add 2 cups of water and whisk until smooth, ensuring no lumps remain. Adjust the water quantity if you prefer a thinner gravy.

Step 3: Make the Tempering

  1. Heat oil in a heavy-bottomed pan.
  2. Add cumin seeds and let them splutter.
  3. Toss in the dry red chillies and sauté until aromatic.
  4. Add curry leaves and ginger-garlic paste, cooking for about 2 minutes until fragrant.

Step 4: Cook the Kadhi

  1. Pour the yogurt mixture into the pan with the tempering. Stir well.
  2. Simmer on low heat for 15 minutes, stirring occasionally.

Step 5: Combine the Kadhi and Badi

  1. Gently add the fried badi into the simmering kadhi.
  2. Let the dumplings soak in the gravy and cook for an additional 5 minutes.
