🥘 Recipe Yield: 4 half pints

Description:

These pickled blackberries are a delightful addition to your culinary repertoire, pairing beautifully with dishes like chicken and turkey. Plus, the remaining vinegar concoction doubles as a fantastic salad dressing, adding a tangy twist to your greens.

Ingredients:

  • 3 1/2 – 4 cups blackberries
  • 3/4 cup white vinegar
  • 3/4 cup cider vinegar
  • 1 tsp ground ginger
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground allspice
  • 1 bay leaf
  • 1 mace

Instructions:

Step Description
1 In a stainless or enamel pot, combine all ingredients except the blackberries.
2 Bring the mixture to a full, rolling boil over medium heat.
3 Once boiling, remove the pot from the heat and carefully remove the bay leaf and mace from the mixture.
4 Place the clean hot jars on a stable surface, then carefully pack the blackberries into the jars.
5 Pour the hot vinegar mixture over the blackberries in the jars, ensuring there’s about 1/4 inch of headspace remaining at the top of each jar.
6 Seal the jars tightly with their lids.
7 Process the jars in a boiling water bath for 5 minutes. If you’re above 1000 feet altitude, adjust the processing time accordingly.
8 After processing, carefully remove the jars from the water bath and allow them to cool completely at room temperature.
9 Once cooled, store the jars in a cool, dark place for at least 1 week before enjoying the pickled blackberries.
