Instructions

Step 1: Prepare the Raita Base

  1. In a mixing bowl, combine the curd, black salt (or rock salt), cumin powder, black pepper powder, and 1/4 cup water (if needed) to achieve a smooth, creamy consistency.
  2. Add the grated carrots, chopped coriander leaves, mint leaves, and green chili to the curd mixture. Stir well to combine.
  3. Cover the bowl and let the raita rest in the refrigerator for at least 15 minutes to allow the flavors to meld.

Step 2: Make the Tempering

  1. Heat the oil in a small tempering pan over medium heat.
  2. Add the cumin seeds and let them sizzle until aromatic.
  3. Stir in the finely chopped garlic and sauté until the garlic turns light golden brown.
