Instructions:

Prepare Watermelon Rind: Trim the green skin and pink flesh from the thick watermelon rind. Cut it into 1″ pieces.

Dissolve 4 tablespoons of salt in 2 quarts of water and pour it over the rind. Let it stand for 5-6 hours.

Drain the water, rinse the rind, and drain again. Cover the rind with cold water and let it stand for another 30 minutes. Then, drain it.

Sprinkle ground ginger over the rind. Cover it with water and cook until fork-tender. Drain the cooked rind.

In a separate pot, combine 4 cups of sugar, lemon juice, and 7 cups of water. Bring the mixture to a boil for 5 minutes.

Add the cooked rind to the boiling syrup and let it gently boil for 30 minutes.

Slice the lemon and add it to the mixture. Continue cooking until the melon rind becomes clear.

Pack the hot preserves into hot jars, leaving 1/4″ headspace.

Remove any air bubbles from the jars and adjust the caps securely.

Process the jars in a boiling water bath for 20 minutes.
