Asem Asem Tulang Sapi Recipe

Ingredients:

  • 500-700 grams of beef bones or short ribs
  • 1500 ml water
  • 5 bay leaves
  • 3 segments of galangal, crushed
  • Spices:
    • 6 shallots, thinly sliced
    • 6 cloves garlic, thinly sliced
    • 5 green tomatoes, chopped to preference
    • 10 bird’s eye chilies, whole
    • 5 tablespoons lemon juice
    • Salt, to taste
    • Sugar, to taste
    • Pepper, to taste

Instructions:

  1. Prepare the Beef Bones: Begin by boiling or pressure-cooking the beef bones with bay leaves and crushed galangal until tender. Once the bones are tender, allow them to cool. When the bones are cool enough to handle, remove any floating fat that has accumulated on the surface of the broth.

  2. Reheat the Broth: Transfer the beef bones and the broth to a pot and heat it gently.

  3. Add Spices: Add the sliced shallots, sliced garlic, chopped green tomatoes, and whole bird’s eye chilies directly into the pot with the beef bones. There’s no need to sauté these spices beforehand; simply add them to the pot.

  4. Season: Stir in the lemon juice and season with salt, sugar, and pepper to taste. Adjust the seasoning as needed to suit your preference.
