Asem-Asem Beef Ribs: A Tangy and Flavorful Delight

Ingredients:

  • 500 grams beef ribs
  • 5 shallots
  • 3 cloves garlic
  • 1 small onion
  • 3 large green chilies
  • 2 large red chilies
  • 3 red bird’s eye chilies (sliced)
  • 3 underripe tomatoes
  • 1 handful of whole bird’s eye chilies
  • 2 cm galangal (sliced)
  • 2 tablespoons cooking oil
  • Salt and sugar, to taste
  • 1 teaspoon ground black pepper

Instructions:

  1. Prepare the Beef Ribs:

    • Begin by thoroughly washing the beef ribs. Place them in a pot of boiling water and cook for about 5-10 minutes. Turn off the heat, remove the ribs, discard the water, and rinse the ribs again to remove any impurities.
  2. Cook the Beef Ribs:

    • Refill the pot with 2 liters of water and return the cleaned ribs to the pot. Bring the water to a boil and let it simmer until the beef ribs become tender. This may take some time, so be patient for the perfect texture.
  3. Prepare the Spice Mix:

    • While the ribs are cooking, finely slice the shallots, garlic, onion, green chilies, red chilies, and red bird’s eye chilies.
  4. Sauté the Spices:

    • Heat the cooking oil in a pan over medium heat. Add the sliced spices and sauté until they become fragrant and the raw smell dissipates. Once done, transfer the sautéed spices into the pot with the beef ribs.
  5. Add Tomatoes and Chilies:

    • Cut the underripe tomatoes into wedges and add them to the pot. Also, add the whole bird’s eye chilies for an extra kick.
  6. Season the Dish:

    • Season the soup with salt, sugar, and ground black pepper. Stir well to combine all the flavors. Allow the mixture to come to a boil, then reduce the heat and let it simmer for about 15 minutes. This will help the flavors meld together and infuse into the tender beef ribs.
  7. Final Touches:

    • Taste the broth and adjust the seasoning if needed. Once satisfied with the flavor, turn off the heat.
  8. Serve:
