Tangy Indonesian Beef Ribs Stew (Asem-Asem Tetelan Sapi)

Indonesian Beef Ribs in Tamarind Sauce (Asem-Asem Tetelan Sapi)

Ingredients:

  • 250 grams of beef ribs (tetelan sapi)
  • 1 ½ packets of green beans (buncis), each packet costing approximately Rp 3000
  • 2 cm galangal, sliced
  • 2 bay leaves
  • 2 medium tomatoes, chopped
  • 8 shallots, thinly sliced
  • 3 cloves of garlic, thinly sliced
  • 10 bird’s eye chilies (cabe rawit), whole
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 ½ pieces of palm sugar (gula merah)
  • 2 tablespoons tamarind paste, diluted with 1 cup of water
  • Salt to taste
  • Water as needed
  • 1 packet beef seasoning mix (Royco Sapi)

Instructions:

  1. Prepare the Green Beans: Wash the green beans thoroughly and slice them diagonally into thin pieces. Set aside.

  2. Prepare the Beef Ribs: Rinse the beef ribs under cold water and cut them into small chunks.

  3. Cook the Beef Ribs: Place the beef ribs in a pot and cover with water, about halfway up the sides of the pot. Bring to a boil, then reduce the heat and let it simmer on low until the beef is tender. This should take about 1 to 1 ½ hours.

  4. Add Green Beans: Once the beef is tender, turn off the heat and add the sliced green beans to the pot. Adjust the water level if necessary, and return the pot to the stove.

  5. Add Aromatics and Flavorings: Add the bay leaves, sliced galangal, chopped tomatoes, sliced shallots, sliced garlic, salt, sweet soy sauce, and palm sugar to the pot. Stir to combine.

  6. Add Chilies and Tamarind: Toss in the whole bird’s eye chilies and pour in the tamarind water mixture. Stir well to ensure the flavors are evenly distributed.

  7. Season and Simmer: Let the mixture cook on medium heat until the sugar has dissolved and the flavors meld together, about 10-15 minutes.

  8. Add Seasoning Mix: Stir in the beef seasoning mix (Royco Sapi) and adjust the seasoning to taste. Cook for an additional 5 minutes.

  9. Finish and Serve: Once everything is well combined and the dish is flavorful, turn off the heat. Your Asem-Asem Tetelan Sapi is ready to be enjoyed.
