Kuah Asam Ayam: A Refreshing Indonesian Chicken Soup Recipe

Delight in the tangy and aromatic flavors of Kuah Asam Ayam, a traditional Indonesian chicken soup that is both vibrant and satisfying. This recipe features tender chicken simmered in a zesty lime broth with a medley of fresh ingredients that bring the essence of Indonesian cuisine right to your table. Perfect for a comforting meal, this dish can be customized with optional vegetables to suit your preference.

Ingredients:

  • 1/2 chicken, cut into pieces
  • 7 string beans (optional)
  • 2 handfuls of broccoli florets (optional)
  • 1 lime, juiced
  • 7 shallots, thinly sliced
  • 5 large red chilies, sliced
  • 10 bird’s eye chilies (adjust to taste)
  • 5 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 1/2 tomato, sliced
  • 2 scallions, chopped
  • Water, as needed
  • Salt, to taste
  • Sugar, to taste
  • Chicken seasoning, to taste

Instructions:

  1. Prepare the Chicken:
Begin by cutting the chicken into your desired pieces and washing it thoroughly.

  2. Prepare the Aromatics:
Thinly slice the shallots, red chilies, and tomato. Set aside.

  3. Cook the Chicken:
In a pot, add water and the chicken pieces. Bring to a boil and cook until the chicken is halfway cooked.

  4. Add the Flavors:
Once the chicken is partially cooked, add the lime juice, shallots, red chilies, sliced tomato, kaffir lime leaves, and bruised lemongrass to the pot. Stir to combine the flavors.

  5. Optional Vegetables:
If using, add the string beans and broccoli at this stage. Alternatively, if you prefer, you can use fresh basil leaves instead of these vegetables.

  6. Season the Soup:
Season the soup with salt, sugar, and chicken seasoning to taste. Allow the soup to simmer until the chicken is fully cooked and the flavors have melded together.

  7. Final Touches:
Add chopped scallions for a fresh burst of flavor. Adjust the seasoning if necessary.

  8. Serve:
Ladle the hot Kuah Asam Ayam into bowls and serve immediately. Enjoy the refreshing and tangy taste of this traditional Indonesian dish!

Enjoy your meal and happy cooking!
