Goreng Asem Iga Sapi (Sour Fried Beef Ribs)

Ingredients:

  • Beef ribs (as needed)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 4-5 red bird’s eye chilies, sliced
  • 1 thumb-sized piece of ginger, grated
  • 2 scallions, chopped
  • 2 green tomatoes, chopped
  • Fried shallots (for garnish)
  • Salt, to taste
  • Sugar, to taste
  • Beef bouillon (Royco), to taste
  • Water, as needed

Instructions:

  1. Prepare the Beef Ribs:
    Begin by boiling the beef ribs in a large pot of water until tender. This step ensures the meat is fully cooked and easily falls off the bone. Once tender, drain the ribs and set them aside.

  2. Sauté Aromatics:
    In a hot skillet with a bit of oil, sauté the finely chopped onion, minced garlic, sliced bird’s eye chilies, and grated ginger. Cook them until fragrant and golden brown, which will release their rich aromas and flavors into the oil.

  3. Combine Ingredients:
