Asem Bandeng Bening: A Refreshing Indonesian Fish Soup

Asem Bandeng Bening is a delightful and fragrant Indonesian dish that features the fresh flavors of bandeng (milkfish) combined with a medley of vegetables and spices. This dish is not only nourishing but also a perfect way to enjoy the light and tangy essence of traditional Indonesian cuisine. Here’s how you can create this heartwarming soup in your own kitchen.

Ingredients

For the Fish:

  • 1 large bandeng (milkfish), cleaned and cut in half
  • Sufficient water for boiling

For Sautéing:

  • 4–6 tablespoons cooking oil
  • 5 shallots, finely chopped
  • 4 garlic cloves, finely chopped
  • 2 large red chilies, sliced
  • 5 bird’s eye chilies, sliced
  • 1 thumb-sized piece of galangal, crushed

For Seasoning:

  • ½ packet of masako (seasoning)
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 2 packets of tamarind (approximately 500 grams)
  • 1 tomato, diced

For Vegetables:

  • 1 sweet corn, cut into thirds
  • 1 bunch of long beans, cut into matchsticks

Instructions

  1. Prepare the Corn: Begin by boiling the sweet corn until tender. This will add a delightful sweetness to your soup.

  2. Sauté the Aromatics: In a large pan, heat the cooking oil over medium heat. Add the chopped shallots and garlic, stirring until fragrant and golden. Then, incorporate the sliced red chilies, bird’s eye chilies, and the crushed galangal, cooking for a few more minutes until the mixture is well combined and aromatic.

  3. Cook the Vegetables: Once the sautéed ingredients are ready, set them aside. In a pot of boiling water, add the long beans and the halved bandeng. Allow them to cook briefly before adding the sautéed mixture.

  4. Season the Soup: Add the tamarind, masako seasoning, sugar, and salt to the pot, stirring well to combine all the flavors. Finally, toss in the diced tomato for a refreshing touch.

  5. Taste and Adjust: As everything simmers together, taste the broth and adjust the seasoning according to your preference. Let the soup cook until the fish is fully cooked and the vegetables are tender.

  6. Serve: Once cooked to perfection, gently lift the pot from the heat. Ladle the Asem Bandeng Bening into bowls and serve hot, accompanied by steamed rice for a complete meal.
