Patin Kuah Asam (Sour Soup with Pangasius Fish)

Ingredients:

  • 1 medium-sized pangasius fish
  • 1 krai cucumber, sliced
  • Cabbage, chopped (add more if desired)
  • 5 pieces of tamarind
  • 1 green tomato
  • 1 lime
  • Salt, to taste
  • Sugar, to taste
  • Flavor enhancer (optional)
  • 1.5 liters of water

Ground Spices:

  • 10 bird’s eye chilies (adjust to taste for spiciness)
  • 2 thumb-sized pieces of turmeric
  • 1/2 thumb-sized piece of ginger
  • 1/2 thumb-sized piece of galangal
  • 5 shallots
  • 3 cloves of garlic
  • Coriander, to taste
  • 5 candlenuts
  • Cumin, to taste

Instructions:

  1. Prepare the Fish:

    • Begin by cleaning the pangasius fish thoroughly. Slice it as preferred.
    • Rub the fish with lime juice to remove any fishy odor. Let it sit for a few moments, then rinse again until clean.
  2. Cook the Vegetables:

    • In a pot, bring the water to a boil.
    • Add the sliced krai cucumber and cabbage to the pot. Let them cook until they become tender.
  3. Add the Ground Spices:

    • Once the vegetables are tender, add the ground spices, green tomato, and tamarind to the pot.
    • Stir well to ensure the spices are evenly distributed.
  4. Cook the Fish:

    • Add the cleaned pangasius fish to the pot.
    • Let the fish cook until it is fully infused with the spices and the soup reaches a perfect boil. Be careful not to stir too much to prevent the fish from breaking apart.
  5. Season and Serve:

    • Add salt, sugar, and flavor enhancer to the pot. Taste and adjust the seasoning as needed.
    • Once the flavors are well balanced, your Patin Kuah Asam is ready to be served. Enjoy this delightful and tangy fish soup while it’s hot!

Cooking Tips:

  • Avoid frequent stirring to maintain the integrity of the fish pieces.
  • Adjust the level of spiciness by adding more or fewer bird’s eye chilies based on your preference.

This traditional Indonesian recipe offers a tantalizing blend of sour and savory flavors, perfect for those who enjoy a refreshing and spicy dish. Whether served as a main course or as part of a larger meal, Patin Kuah Asam is sure to impress with its rich taste and aromatic broth. Enjoy your culinary journey with this exquisite dish!
