Asem Asem Patin is a delightful Indonesian recipe that showcases the tender patin fish, combined with vibrant vegetables and a tantalizing blend of spices. This dish is not only refreshing but also easy to prepare, making it a wonderful addition to your culinary repertoire. Here’s how to create this flavorful dish in your kitchen.

Ingredients

For the Fish:

  • 1 whole patin fish (cleaned and cut into pieces)
  • 2 green tomatoes (diced)
  • 1 red tomato (diced)
  • 1 handful of red chili peppers (whole)
  • 5 red chilies (sliced diagonally)
  • 1 tablespoon of tamarind paste (asam jawa)
  • 1 lime (juiced)
  • Fresh basil leaves (to taste)

Spice Paste:

  • 1 thumb-sized piece of turmeric
  • 5 shallots
  • 2 cloves of garlic
  • 1 thumb-sized piece of ginger (crushed)
  • 1 stalk of lemongrass (crushed)
  • 2 kaffir lime leaves
  • 2 bay leaves

Additional Ingredients:

  • 1.5 liters of water
  • Oil (for frying)
  • Sugar and salt (to taste)
  • Seasoning (optional)

Preparation Steps

  1. Prepare the Fish:
Begin by cutting the patin fish into pieces according to your preference. Rinse the fish thoroughly and drizzle with lime juice. Let it sit for about 5 minutes, then fry until half-cooked. Drain and set aside.

  2. Sauté the Spice Paste:
In a pan, heat a bit of oil over medium heat. Add the ground spice paste along with the crushed lemongrass, ginger, kaffir lime leaves, bay leaves, salt, sugar, and optional seasoning. Sauté until the aroma wafts through your kitchen, about 3-5 minutes.

  3. Simmer the Dish:
Pour the water into the pan with the sautéed spices. Add the fried fish pieces, sliced red chilies, tamarind paste, and whole red chili peppers. Allow the mixture to come to a gentle boil.

  4. Add the Vegetables:
Once boiling, turn off the heat and stir in the diced red and green tomatoes, as well as the fresh basil leaves. The residual heat will gently cook the tomatoes and infuse the dish with their freshness.

  5. Serve:
Serve your Asem Asem Patin warm, enjoying the balance of tangy, spicy, and aromatic flavors. This dish pairs wonderfully with steamed rice and is perfect for family gatherings or special occasions.

Enjoy!

With its bold flavors and vibrant colors, Asem Asem Patin is sure to impress your guests and family alike. Happy cooking, and enjoy every delightful bite of this Indonesian masterpiece!
