Tahu Gejrot: A Delightful Indonesian Tofu Dish

Ingredients:

  • 5 pieces of brown tofu (preferably Sumedang tofu, cut into cubes)
  • 5 green bird’s eye chilies (adjust to taste)
  • 1 large red onion
  • 1 large garlic clove

For the Sauce:

  • 1 tablespoon tamarind paste
  • 1 piece of palm sugar (finely sliced)
  • A pinch of salt
  • 1 large glass of water (about 250 ml)

Instructions:

  1. Prepare the Tofu:
    Begin by frying the tofu cubes briefly until they are golden brown. Avoid overcooking to prevent them from becoming too dry. Once done, remove from heat and set aside.

  2. Prepare the Spice Paste:
    Coarsely grind the green chilies, red onion, and garlic together. The mixture should be slightly chunky, not too smooth.

  3. Make the Tamarind Sauce:
    In a small saucepan, bring the water to a simmer over medium heat. Add the tamarind paste and finely sliced palm sugar. Stir until the sugar has completely dissolved and the mixture reaches a gentle boil. Remove from heat once done.

  4. Assemble the Dish:
    Cut the fried tofu into bite-sized cubes and place them in a serving bowl. Add the coarsely ground spice paste on top. Pour the warm tamarind sauce over the tofu. Gently mix everything together until well combined.

  5. Serve:
