Mustard seeds (Rai/Kadugu) 1/2 teaspoon
Garlic (crushed) 2 cloves

Curry leaves 2 sprigs
Coriander (Dhania) Leaves (finely chopped) 6 sprigs

Instructions

  1. Preparation
    Start by prepping all the ingredients. Slit the green chillies, peel and dice the raw mango, and crush the garlic. Set all ingredients aside for easy access during cooking.

  2. Cooking the Toor Dal
    In a pressure cooker, add the toor dal along with 2 cups of water, salt, turmeric powder, and the slit green chillies. Close the lid and cook on medium heat for 4 whistles. Turn off the heat and allow the pressure to release naturally. Once the pressure has been released, open the lid and mash the dal with the back of a ladle. Set the cooked dal aside.

  3. Cooking the Mangoes
    In another pressure cooker, combine the diced raw mango with turmeric powder, red chilli powder, a pinch of salt, and 1/2 cup of water. Close the lid and pressure cook for 2 whistles. After the pressure has released naturally, open the lid and set the cooked mangoes aside.

  4. Tempering the Dal
    In a saucepan, heat the ghee over medium heat. Add the mustard seeds and dry red chillies, allowing them to crackle and release their aroma. Next, add the crushed garlic and sauté until the garlic softens and slightly changes color. Be careful not to let the garlic turn brown.

  5. Combining and Final Cooking
    Add the curry leaves to the saucepan and sauté for a few seconds. Then, stir in the cooked raw mangoes and the mashed toor dal. Mix well and adjust the consistency by adding a little water if needed. Taste and adjust the salt as per your preference. Let the dal simmer for 3-4 minutes, allowing the flavors to meld together.

  6. Garnishing and Serving
    Once the dal has thickened to your desired consistency, turn off the heat. Garnish with finely chopped coriander leaves for a burst of freshness. Serve the Mamidikaya Pappu hot with steamed rice and Andhra-style Paruppu Podi (Dal Podi) for a complete and satisfying meal.
