Description:
If you’re looking for a recipe that will make your taste buds dance with joy, look no further than these Mustard Short Ribs. The mustard marinade infuses the beef with a tangy richness that makes the meat incredibly tender and flavorful. My friend made this for me one night, and I was blown away by how it practically melts in your mouth! Even using plain yellow mustard will yield fantastic results. This dish was an instant hit with my family, and they were convinced they had died and gone to heaven with each bite. Though the cooking time is 2 hours, be sure to allow extra time for marinating the meat. Don’t let the nutritional stats deter you; these ribs are just as delicious and indulgent as you’d hope.

Ingredients:

  • 6 short ribs of beef
  • 1/2 cup prepared mustard
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 4 onions, sliced
  • Shortening for browning

Instructions:

  1. Prepare the Marinade: In a large mixing bowl, combine the mustard, lemon juice, sugar, minced garlic, salt, and pepper. Mix well until the sugar and salt are fully dissolved, and the ingredients are evenly blended.

  2. Marinate the Meat: Place the short ribs into a large ziplock bag. Pour the mustard mixture over the ribs, ensuring they are well-coated. Seal the bag tightly, pressing out as much air as possible. Refrigerate and allow the ribs to marinate for at least 24 hours, turning the bag occasionally to ensure even marination.

  3. Brown the Ribs: After marination, remove the short ribs from the ziplock bag and wipe off excess marinade. Heat a generous amount of shortening in a large skillet over medium-high heat. Brown the short ribs on all sides until they develop a rich, deep color, about 4-5 minutes per side.

  4. Bake the Ribs: Preheat your oven to 350°F (175°C). Transfer the browned ribs to a baking dish. Pour the remaining marinade from the ziplock bag over the ribs and top with sliced onions. Cover the baking dish with aluminum foil and bake in the preheated oven for 2 hours, or until the meat is tender and easily falls off the bone.

  5. Serve and Enjoy: Once done, remove the baking dish from the oven and let the ribs rest for a few minutes before serving. Serve the ribs with the caramelized onions and some of the pan juices spooned over the top. These ribs are perfect with mashed potatoes or a side of roasted vegetables.
